Plant blanchers

Previous - Next

1862. Blanchers are any close utensil that, when whelmed over a plant, will exclude the light. The most common is the Blanching-pot, which is used to exclude light from sea-kale and rhubarb-stalks, and some other culinary vegetables, where the green colour is to be avoided. In the Pyrenees they are used for blanching celery.
